Cashew Burfi

Ingredients/Materials:

  • 1 cup chilled soaked cashews
  • 1/3 cup sugar
  • 1/4 cup water
  • a pinch of saffron
  • Non-stick pan
  • food coloring

Take the cashews and mash them into a paste in a blender. (Without water).

Take a Non-stick pan and take the sugar and water. Keep on medium heat. Boil into a sugary syrup. Add the cashews and mix until it becomes a giant clump that  sticks to the spoon and not the pan. Take the mix and set aside for cooling. Once it cools, flatten with a rolling pin and cut into desired shapes. Set and enjoy!

Pickle Daal

Ingredients/Materials:

  • 1 cup massoor daal
  • 1/4 teaspoon pepper
  • 1 teaspoon coriander powder
  • 2 tablespoons coriander leaves
  • 1/4 teaspoon turmeric
  • 1/2 teaspoon cumin seed
  • 1 tbsp Garlic paste
  • 1/2 teaspoon Hieng (Available at most Indian grocery suppliers)
  • 1 tablespoon olive oil
  • 1/2 cup chopped cucumber pickles
  • 1 1/2 cup water
  • 1 tbsp coriander leaves

Procedure:

Boil all the ingredients together except for the cucumbers. Cook until the daal is soft. Then add the pickles. Mix. Cover for 10 minutes. Enjoy! Garnish with coriander leaves

 

Salad Pasta

Ingredients:

  • 2 cups pasta (boiled)
  • 1 onion, chopped
  • 1 cup tomato paste
  • 2 cups cheese
  • 1 tomato, chopped
  • 1 tbsp minced garlic
  • 2 tbsp basil
  • garlic seasoning
  • 2 cups salad
  • 1/2 olives
  • 1 tsp salt
  • 1/3 cup water
  • 1/2 cup chips

Procedure: Mix all the ingredients, sprinkle some cheese on top, and bake for 20 minutes. Enjoy!

Papdi Chat

Ingredients/Materials:

Dough Materials:

  • 1 cup all purpose flour
  • 4 tbsp olive oil
  • 1 tsp salt
  • 1 tsp chili powder
  • 1 tbsp coriander powder
  • 1 tbsp chat masala
  • 1 tsp green chili paste
  • 1 tbsp basil paste
  • 1 cup water
  • 2 cups oil (for frying)
  • a pinch of salt

Toppings:

  • 1 cup plain yogurt
  • 1 cup namkeen
  • 1/2 chopped onions
  • 1 cup chutney

Make a dough, and make sure to add the water to the dough gradually. Flatten into discs and fry until golden brown. Then add the toppings and enjoy!

 

Chatpata Potatoes

Ingredients:

  • 2 cups medium butter potatoes (peeled, and boiled)
  • 1 cup tomato paste
  • 1/3 cup water
  • 1 tsp black pepper
  • 1 tbsp kashmiri mirch
  • 2 tbsp ginger garlic paste
  • 2 tbsp coriander powder
  • 1/2 tsp turmeric powder
  • 1 tsp salt
  • 3 cloves
  • 3 cardamom
  • 1 tbsp rai
  • 3 tbsp oil
  • 1/3 cup plain yogurt
  • 2 tbsp chopped green chilli

Procedure: In a pan, on high heat, add the oil and the ginger garlic paste. Then gradually add all of the spices and toast them. Then add the tomato ketchup and water. Boil for 5 minutes. After that, add the potatoes. Cook for 5 minutes. Then add the yogurt off to the side when you serve it. Eat with khasta kachori. Enjoy!
