Carrot and Lockey Soup (Vegan)

Ingredients/Materials:

  • 2/3 cup carrots
  • 1/2 cup lockey
  • 2 green tomatoes
  • 1 cup water
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp turmeric
  • 1/4 tsp cumin seed (Toasted) (Garnish)
  • 1 tsp olive oil (Garnish)
  • 1/2 tsp ginger powder

Procedure: Boil with all the spices besides the garnish. Then blend into a slightly thick paste. Add the garnish and enjoy!

Brown Sugar and Apple Kher

Ingredients/materials:

  • 1/4th cup rice (washed and drained)
  • 4-5 cups milk
  • 2-3 cardamom seeds (crushed)
  • 2 tbsp almonds (silvered)
  • A pinch of saffron
  • 1 tbsp pistachio (chopped)
  • 1 tbsp raisins
  • 2-3 tbsp sugar or as desired
  • 2 tbsp brown sugar
  • 1 cup chopped apple peices

Procedure: Put the rice, milk and cardamom in a pan, bring to boil and simmer gently until the rice is soft and the grains are starting to break up. Add almonds, pistachio, saffron and raisins and simmer for 3-4 minutes. Add the sugar and stir until completely dissolved. Remove the rice kheer from heat and serve either warm or chilled.

Coconut ladoo (Vegan)

Ingredients/Materials:

  • 1 cup chilled cashews
  • 1/3 cup sugar
  • 1/4 cup water
  • 1 tbsp mago paste
  • a pinch of saffron
  • Non-stick pan
  • coconut flakes
  • 1 tsp vanilla etract

Take the cashews and mash them into a paste in a blender. (Without water).

Take a Non-stick pan and take the sugar and water. Keep on medium heat. Boil into a sugary syrup. Add mango paste and mix for 1 min. Add the cashews and mix until it becomes a giant clump that kind of sticks to the spoon and not the pan. Add the vanilla extract. Take the mix and set aside for cooling. Then form into small balls coat in coconut and Enjoy!

Paneer Tikki

Ingredients/Materials:

  • 1 cup mashed paneer
  • salt (according too taste)
  • red chili powder
  • 1/3 cup chopped onion
  • 1/3 cup chopped celery
  • 1 tablespoon rasins and cashews

Procedure: In a powl add the chopped celery and onion, add all materials besides paneer, and mix well. Make balls of the paneer, flatten, add the filling cover and press again. Then bake at 350 degrees farenhiet until golden brown and enjoy!

Rava Halwa

Ingredients/Materials:

  • 1/2 cup sooji (Rava)
  • 1/2 cup water
  • 1/3 cup crushed nuts (cashews, raisins, walnuts, almonds, and pistachios)
  • 5 tbsp butter
  • 4 tbsp sugar (according to taste)

Pour the butter in a pan. Toast the sooji. When browned add the water. Then add all the remaining ingredients and toast. When it looks dry and crumby turn of the gas.

Mango and Cashew Burfi (Vegan)

Ingredients/Materials:

  • 1 cup chilled cashews
  • 1/3 cup sugar
  • 1/4 cup water
  • 1 tbsp magno paste
  • a pinch of saffron
  • Non-stick pan

Take the cashews and mash them into a paste in a blender. (Without water).

Once cooled flatten with a rolling pin and cut into desired shapes.
