Eggplant Sandwiches



  • 1 eggplant (peeled)
  • 1 tbsp coriander powder
  • 1 tsp jeera
  • 1/2 tsp salt
  • 1/4 tsp red chili powder
  • 1/3 cup tomato paste
  • 2 tbsp raisins
  • 2 tbsp oil
  • 1/2 cup chopped onions
  • 1/4 tsp turmeric
  • 1 tbsp garlic and ginger paste
  • 1 tbsp curry leaves
  • 1/2 tsp heing
  • 1 cup water


  • bread
  • cheese
  • tomato sauce


Chop the eggplant and then cook them directly on the gas. Stop when they are charred in some places.

In a pan, add the oil and add the onions. Toast. When the onions start browning add all the spices and cook again. Then add water and let simmer on medium heat for 15 minutes.

Make a sandwich with the eggplant dish. Enjoy!
