Pickle Daal

Ingredients/Materials:

  • 1 cup massoor daal
  • 1/4 teaspoon pepper
  • 1 teaspoon coriander powder
  • 2 tablespoons coriander leaves
  • 1/4 teaspoon turmeric
  • 1/2 teaspoon cumin seed
  • 1 tbsp Garlic paste
  • 1/2 teaspoon Hieng (Available at most Indian grocery suppliers)
  • 1 tablespoon olive oil
  • 1/2 cup chopped cucumber pickles
  • 1 1/2 cup water
  • 1 tbsp coriander leaves

Procedure:

Boil all the ingredients together except for the cucumbers. Cook until the daal is soft. Then add the pickles. Mix. Cover for 10 minutes. Enjoy! Garnish with coriander leaves

Salad Pasta

Ingredients:

  • 2 cups pasta (boiled)
  • 1 onion, chopped
  • 1 cup tomato paste
  • 2 cups cheese
  • 1 tomato, chopped
  • 1 tbsp minced garlic
  • 2 tbsp basil
  • garlic seasoning
  • 2 cups salad
  • 1/2 olives
  • 1 tsp salt
  • 1/3 cup water
  • 1/2 cup chips

Procedure: Mix all the ingredients, sprinkle some cheese on top, and bake for 20 minutes. Enjoy!

Chatpata Potatoes

Ingredients:

  • 2 cups medium butter potatoes (peeled, and boiled)
  • 1 cup tomato paste
  • 1/3 cup water
  • 1 tsp black pepper
  • 1 tbsp kashmiri mirch
  • 2 tbsp ginger garlic paste
  • 2 tbsp coriander powder
  • 1/2 tsp turmeric powder
  • 1 tsp salt
  • 3 cloves
  • 3 cardamom
  • 1 tbsp rai
  • 3 tbsp oil
  • 1/3 cup plain yogurt
  • 2 tbsp chopped green chilli

Procedure: In a pan, on high heat, add the oil and the ginger garlic paste. Then gradually add all of the spices and toast them. Then add the tomato ketchup and water. Boil for 5 minutes. After that, add the potatoes. Cook for 5 minutes. Then add the yogurt off to the side when you serve it. Eat with khasta kachori. Enjoy!

Garlic Pasta

Ingredients:

  • 1 cup pasta (boiled)
  • 1 onion, sliced into circles
  • 1 cup tomato paste
  • Any cheese of your choice
  • 1 tomato, chopped into circular peices
  • 1 tbsp minced garlic
  • 2 tbsp basil
  • garlic seasoning
  • 1 tsp salt
  • 1 sliced potato (Boiled)

Procedure: First, split the salt and add it to both the tomato paste and the pasta. Mix. Then, add the tomato paste, potatoes and then the pasta in the cupcake. Add cheese into the middle of the pasta. Then add more tomato sauce on top. Add more cheese, tomatoes, and onion rings on top. Then season on top. Then bake at 350 degrees for 20 minutes.

Masala Paneer

Ingredients/Materials:

  • 1 cup paneer
  • 1 cup chopped onions
  • 1 cup tomatoes (chopped)
  • 1/3 cup cream
  • 1 teaspoon Methi (Available at most Indian groceries suppliers)
  • 1 teaspoon salt (according to taste)
  • 1/4 teaspoon pepper (according to taste)
  • 1 tablespoon Kashmiri Red Chili Powder
  • 2 teaspoon coriander powder
  • 1 teaspoon crushed coriander seeds
  • 1 tablespoon chopped coriander leaves
  • 2 tablespoons olive oil
  • 1 cup water
  • 1 tsp turmeric
  • 1 cup tomato paste
  • 1 tsp honey
  • 3 tbsp poppy seed paste
  • 1/3 cup peas
  • 2 tbsp cashews
  • 2 tbsp chopped green chili

Procedure:

In a pan on high heat, add the olive oil. When the oil gets hot, add the onions. When the onions are lightly browned, add all other ingredients one by one, mixing each in, besides paneer, water, and cream. Cook for 5-10 min. What you are making right now is the Masala. When the masala turns into a paste, add the paneer, and water.  Boil for 10 min. Add cream, mix, and cover for 10 min. Garnish with coriander leaves and enjoy!

Besan Khasta Kachori

Ingredients/Materials:

  • 1/2 tsp salt (According to taste)
  • 1/2 tsp Ajwian
  • 2 cups whole wheat flour
  • 1 cup water
  • 3 tbsp sesame seeds
  • 1 tsp garlic powder
  • 2 tbsp coriander powder
  • 6 tbsp oil

Stuffing:

  • 1/2 cup besan
  • 2 tbsp olive oil
  • 1 tbsp coriander powder
  • 1 tsp jeera powder
  • 1 tsp ajvean
  • 1 tsp red chili powder
  • 1 tbsp chat masala
  • 1 tbsp fennel seeds
  • 1 tsp salt

2 cups oil (frying)

Procedure:

Dough: Mix and make a dough.

Stuffing: In a pan, add the oil and toast all the ingredients together for 5 minutes.

Make small balls of the dough, stuff them with the stuffing, roll them out into small pancakes, and fry at medium heat.

 

Sooji Dosa

Ingredients/Materials:

Batter:

  • 1 cup sooji
  • 1 cup yogurt
  • 1 tsp salt
  • 1/2 cup water

Procedure:

Batter: Mix the ingredients, and set aside for 30 min. This will look like pancake batter, but not too thick. In a nonstick pan, spread the batter very thinly, and make the dosa. When it is ready, fill the aloo paste and then roll it up. Enjoy!
