Pearl Rice Khidchi

Ingredients/Materials:

  • 1 cup pearl rice
  • 1 tsp black pepper
  • 1 tsp salt
  • 2 tbsp coriander powder
  • 1/3 cup peas
  • 1 1/2 cup water

Choka:

  • 1 tbsp olive oil
  • 1 tsp jeera
  • 1 tbsp cury leaf
  • 1 tsp heing

Boil all materials together in a pot until the pearl rice has been cooked. If needed, add more water. This process should take about 15 minutes. For choka, toast all the materials together in a small pan on high heat. When jeera has been browned add the choka to the rice.

Saffron Sweet Rice

Ingredients/Materials:

  • 2 cups rice
  • 1 teaspoon saffron
  • 1 tablespoon olive oil
  • 1/2 cup water
  • steam cooker

Procedure:

Preheat a steam cooker until it is hot. Add all ingredients. Cook for 15 min. Check. If not fully cooked, cook for 5-10 min more.

Garnish:

  • 1/2 cup carrots (shredded)
  • 2 tbsp raisins
  • 2 tbsp sunflower seeds
  • 2 tbsp chopped walnuts
  • 2 tbsp cashews
  • 5 cloves
  • 3 green cardamoms
  • 2 tbsp butter
  • 1/2 cup sweet condensed milk
  • 3 drops green food coloring
  • 3 drops blue food coloring
  • 1 tsp brown sugar
  • 2 ounces water

In a pan, take the butter, add the cardamom, cloves, raisins, and nuts. Once the mix is somewhat dry, add the condensed milk and the sugar and water. Mix for 1-2 minutes on high heat. Mix this into the rice, and the add the drops of food coloring, mix, cover for a few minutes, and enjoy!

Fancy Rice

Ingredients/Materials:

  • Steam cooker
  • 2 cups rice
  • 1 tablespoon toasted cumin seed
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt (according to taste)
  • 5 star anise
  • blue, red, yellow, and green food coloring (2 drops each)

Garnish:

  • 1 cup chopped onions
  • 3 tbsp olive oil
  • 2 tbsp cashews
  • 2 tbsp walnuts
  • 2 tbsp raisins
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 1 tsp chat masala
  • 1 tbsp lemon juice

Take the cooker, add all ingredients besides the toasted cumin seed, set on white rice, cook for 15 min and check if cooked. If not cook for 10 more min. Add the drops of food coloring, cover for 5 minutes.

For the garnish; Toast the onions in the olive oil and gradually add all of the other ingredients. Then toast for an additional 2 minutes. Put on top of the rice and enjoy!

Vegetable Tikki Briyani

Ingredients/Materials:

For Tikki:

  • 1 cup carrots, minced
  • 2/3 cup minced turnips
  • 1/3 cup chopped green onions
  • 1/2 cup potatoes, boiled, and mashed
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp chat masala
  • 3 tbsp minced mint
  • 2 tbsp besan
  • 1/3 cup cornstarch

Procedure for tikki:

Preheat oven at 350 degrees. Mix all of the ingredients. When mixed, shape them into a tikki shape and bake until they are golden brown.

For Gravy:

  • 1 cup chopped sweet mini bell peppers
  • 1 cup water
  • 1 cup tomato sauce
  • 1/4 tsp honey
  • 1 tsp salt
  • 1/2 tsp pepper

Procedure: Boil and mix all of the ingredients for 10 min.

For rice:

Ingredients/Materials:

  • 2 cups rice
  • 1 teaspoon saffron
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • 1/2 cup water
  • steam cooker

Procedure:

Preheat a steam cooker until it is hot. Add all ingredients except for garnish. Cook for 15 min. Check. If not cooked, cook for 5-10 min more.

Garnish:

  • 1 cups cheese

Final procedure: First, put a layer of sauce on the bottom of your dish. Then place a layer of rice. Then a tikki. Then sprinkle some cheese on top. Repeat this until you run out of material for each. Then cover it up and let it steam for 10 minutes. Enjoy!

Pineapple Radish Briyani

Ingredients/Materials:

  • 1 cup basmati rice
  • 1 cup water
  • 4 tbsp dried cranberries
  • 1 tsp salt (according to taste)
  • 2 tbsp olive oil
  • Rice cooker
  • 4 slices radish

Masala Materials:

  • 1 cup onions
  • 3 tbsp tomato sauce
  • 1/3 cup water
  • 1 tbsp garlic paste
  • 1 tbsp ginger paste
  • 1 tbsp chopped coriander leaves
  • 2 tbsp cashews
  • 2 tbsp sunflower seeds
  • 1 tbsp butter
  • 4 elachi
  • 1/2 cup pineapple

Procedure: In the rice cooker, add all the ingredients but the butter. Steam for 15 min or until the rice is cooked. In a pan, add butter and toast the onions. Then mix in the ginger and garlic paste. Add the other ingredients but the sauce and water. Toast. When lightly browned add the sauce and water. Mix. Slowly add the fried mixture into the rice and mix. Enjoy!
