Rosemary Chili Potatoes (Vegan)

Ingredients/Materials:

For potatoes

  • 1 1/2 cup chopped potatoes
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp corn starch
  • 2 tbsp all purpose flour
  • 2 cups oil (for frying)

Mix all of these ingredients with the potatoes and fry.

Gravy:

  • 2 cups onions. sliced into squares
  • 1 cup sweet peppers, sliced into a squares
  • 3 green peppers
  • 1 sprig of rosemary
  • 1/3 cup
  • as much hot sauce you want
  • 2 tbsp soysauce
  • 1 tsp honey
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/3 cup ketchup
  • 1/3 cup water
  • 1 tbsp cornstarch
  • 1 tbsp olive oil

Procedure: In a pan, take the oil and cook the onions and peppers until they are browned. Add the rosemary and add all the ingredients one by one, and mix. Add the water and cornstarch last. Mix in the potatoes and steam for 2 minutes. Enjoy! Note: If its too spicy, or salty, add more honey!

Green Petha Sabji (Vegan)

Ingredients/Materials:

  • 1 tsp jeera
  • 2 small onions
  • 1 cup tomato puree
  • 2 tbsp olive oil
  • 2 cups ash gourd (Green Petha)
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1 tsp toasted coriander seeds
  • 1 tsp rai
  • 1/2 tsp turmeric powder
  • 1 cup water

Procedure: In a pan, toast all of the spices together with the oil and onions. Then mix in the gourd and the water. Simmer. When the gourd is cooked the dish is ready. Enjoye!

Black Chole (Vegan)

Ingredients/Materials:

  • 1 cup chickpeas (chole)
  • 3 cups water
  • 2 tbsp tea leaves
  • 1/2 cup water
  • 1 tsp salt
  • 1 tsp red chili powder
  • 1/4 tsp black pepper
  • 1 tbsp channa masala
  • 2 tbsp coriander powder
  • 4 small elachi (cardamom)
  • 2 badi elachi (black cardamom)
  • 1/2 cup tomato paste
  • 1/2 tsp turmeric powder

Choka:

  • 1/3 cup onions
  • 3 dried red chilies
  • 1/2 tsp jeera
  • 2 tbsp olive oil

Procedure:

Boil the 1/2 cup water and tea leaves for tea water. Keep the water and throw away the leaves. Boil the chickpeas and the water for about 10 min. If need be, add 1/3 cup water more. Then add in all of the other spices, and boil. The add the choka. For the choka, all you need to do is fry the spices in the olive oil til the jeera browns. The pour it on top of the chole, and enjoy!

Aajvaiean Bhindi (Vegan)

Ingredients/Materials:

  • 2 cups chopped okra
  • 3 tbsp mustard oil
  • 1/2 tsp red chilli powder
  • 1/4 tsp salt (According to taste)
  • 1 tsp ajveain
  • 1/2 tsp turmeric
  • 1 tbsp coriander powder
  • 1/3 cup minced tomatoes
  • 1/3 cup tomato paste

Procedure: Take a pan and pour the oil and ajviean in. When lightly browned add the okra and then cook until the okra is lightly browned. Add all the spices and tomatoes. Cook until the okra is soft. Enjoy!

Stuffed chili peppers (Vegan)

Ingredients/Materials:

  • 2 tbsp coriander powder
  • 2 tbsp coriander seeds
  • 2 cup green peppers
  • 1/2 tsp pepper
  • 1 tsp salt
  • 1 tbsp rai
  • 3 tbsp olive oil
  • 1/2 tsp methi seeds
  • 1 tsp podina
  • 2 tbsp sunflower seeds
  • 1/2 tsp turmeric
  • 1 tsp garlic powder
  • 1 tbsp chopped raisins
  • 1/2 tsp aamchur powder
  • 1/4 tsp colongae

Procedure: Slice and stuff all the peppers with a mix of all the spices. Fry and Enjoy!

Pea Idli (Vegan)

Ingredients/Materials:

  • 1 tbsp raisins
  • 1/2 tsp turmeric
  • 2 tbsp coriander leaves
  • 1 tbsp green peppers
  • 1/2 tsp red pepper powder
  • 2/3 cup peas
  • idli mix

Procedure: Mix all of the materials together and follow the instructions on the idli box.
